Creating Flavorful Salads

Monday, October 15th, 2007

Even though salads have been enjoyed since ancient times, the variety can be both tempting and visually pleasing. As we become more and more health conscious, salads become more popular. Usually people think of vegetables when salads are mentioned.

However, there are numerous fruit salads at every family gathering and pot-luck in the country! Salads can contain anything from apples to zucchini and anything in between, just use your imagination.

Although lettuce has been the starting point for most salads, there are many other foods
favorites you can start with:

*Watercress, cabbage or spinach

*Oranges, apples or grapefruit

*Beans or frozen peas

*Broccoli

*Potatoes

*Meats and seafood

Just about any food you can think of can be turned into a salad with a modest amount of creativity! You can create many kinds of salads:

*Jell-o salads with fruit

*Fruit salads with yogurt

*Green salads with every kind of
vegetable imaginable

*Coleslaw

*Potato salad

*Tuna salad

*Chicken salad

Again, the varieties are endless, and the list can go on and on to eternity.  One of my favorites includes a green salad with sunflower seeds or cashews, lettuce, tomatoes, celery, onions, carrots and ranch dressing.

With the dressings you can get just as creative, ranch, French, blue cheese and Italian are your basic dressings. Now try some of these, mix a little concentrated orange or lemon juice to French dressing or mayonnaise for a delicious fruit salad dressing.

How about a dressing for grapefruit made with, sugar, pepper, paprika, dry mustard,
grapefruit juice and catsup?

Add a little chili powder to concentrated juice, horseradish, a cooked egg and mayonnaise for a spicy new taste.

Every nationality has their own favorite flavors in salads, get together with a few friends for a salad party; you would be amazed at the variety you will see.

Treat Your Baby To Organic Homemade Baby Food

Monday, October 15th, 2007

Have you ever tasted prepared baby foods, if so you may understand why babies spit out so much of it!  The only thing I could get my sons to eat were the fruits, they would occasionally eat the cereal if I mixed fruit with them.

There is also the consideration of what is in baby foods; I realize that baby foods should be prepared with care and that you shouldn’t have to worry about purchasing them.

Then think about the price - why do we have to pay that much for such little quantities? There had to be a tastier, healthier, less expensive alternative to store bought baby food.

However, there is the option of organically preparing your own homemade baby foods, from the food you prepare for you own family, using just a few adjustments, depending on the child’s age. Always talk to your doctor before putting your child on solid foods, and remember that a baby’s digestive track is much more sensitive to spices and solid foods than a toddlers or adults.

When preparing organic baby foods, cooking time and tenderness are important, a blender or a food processor is a necessity. Start with low acid foods and juices, apple juice and applesauce seem to be a standard starting diet when changing a child from formula to solid organic baby foods.

Applesauce is one of the easiest organic foods there is to make, simply peal and core the apples, cut up and place in a saucepan, cover with water and cook until apples are tender. When cooled, place in a blender and add a touch of honey to sweeten, blend completely and place in an airtight container until ready to use.

Carrots or peas are also a food that babies are started on early, again, cook until tender and cool, blend and place in airtight container until ready to use.

Another homemade baby food recipe uses the natural taste of peas and carrots. These two vegetables together are great, and they don’t normally need any additives. As your baby becomes familiar with solid foods, you can begin to add more variety to their diet, always being aware of the sensitivity of their digestive abilities.

Almost anything your family eats can be made into organic homemade baby food just go
easy on additives when you start out.  It is always better to make it too bland than to add to much seasoning.
